Because I'm Happy

March 20th was for realz a Happy Day for me (appropriate since it was the International Day of Happiness. 


I look like a hot mess (from rolling out that damn Croissant dough) but I was indeed grinding ear to ear. I completed ProBaking 1!!!!!!!!!!!!!!!!!

The past 10 Thursdays has been fun times. From taking the train to LA, spending some solidarity while reading, and bringing home some baked goods (not to mention gaining some solid weight), I've never been ever in my life, looked forward for school. Even in nursing school, I groan every morning when I wake up. This one, I was like, whoop, time to go. 

I'm planning to take ProBaking 2 and maybe some other side classes, probably from Sur La Table, and also I've been taking the Artisan Bread Class & French Pastry from Craftsy. If you want to learn some classes online, I highly recommend Craftsy. Not only they are very educational, once you buy a class, you can go back to it at anytime, any day, till forever and ever.

Some of my friends asked me what is my favorite thing to bake now and in a heartbeat I would yell, "BREAD!" I love bread with a passion. Currently I'm loving Challah & Brioche. Oh my. The smell that it releases when baking in the oven... If only there is a perfume with the scent of fresh bread... (jk).

And honestly I am pretty sad that now I don't have any classes to go to. Now pretty much I must have to practice on my own. My dad is already asking me about business plans (like seriously? I just finished school). I still need to practice a lot. I'm already designing labels on the Makr app on my iPad. That app is fun.


So far I might start on tweaking the classic Madeleines. I love the cake/cookie because it is very simple to make. Like today, I made Lemon Rose Water maddies. Interesting blend, I say.


I'm so glad that this I was able to pursue something that I am passionate about. I'm happy that my parents are also encouraging me to do so... as well as my friends and coworkers. 

So I say... Follow and pursue your dreams. My next dream is to have my own cafe. One or two of my sisters wants to collaborate as well. It's nice to know you have family & friends who want to support you in what you love. 

Another dream that I want to do is donating what I make. I like to volunteer. I'm just wondering on how to combine volunteering and baking at the same time. I was thinking on volunteering at a shelter or soup kitchen. Must browse around. Wouldn't it be cool to own a food truck and just pass out food to the homeless. Like awesome gourmet food?

The Inner 5th Grader in Me Is...

If you are a 90s child, you would probably know this iconic super hero.
She was my super hero. She was the one who I wanted to be when I was in 5th grade. 
I rush home from school, ignoring my homework and sat in front of the TV for 30 minutes, ooh-ing and aah-ing the whole time.
I even created my own Sailor Scout with me, of course, being Sailor Moon.
I watched the complete series and read the complete manga and was sad to know it ended. 
It ended well, though (spoiler: Usagi & Mamoru did get married in the present life).
I even have a crescent moon tattoo on my left wrist from a drawing from a Sailor Moon book. 

The new, series, which this article said that they are going back to the Manga and starting from scratch, so in a way it's like a whole brand new style. I'm so excited.

July must come soon!!!

le sigh

there will come a day where every thought, ideas, and plans that you have try to work out/manage crumbles like a piece of pie fallen to the floor (must use food analogy mkay?). messy, sticky, and dirty.

today was one of those days. 

i had so many plans in mind. wishes to fulfill. dreams to achieve. then something happen and the world, for a second, stopped spinning. frozen (and yes, I had "Let It Go" song in my head). 

awkwardness filled the air. the tension in the room was sorta unbearable. i felt numb. 

questioning. why why why. but i did not doubt. did not doubt God.

trials and tribulations are part of life. ups and downs. uphill downhill. life is a full circle. 

maybe this is down time. soon, by the grace of God, it will be up again. and better. 

things happen for a reason... and sometimes you just can't understand the reason.

the one thing we need is faith. faith in God. 

i don't know who holds tomorrow, but i know He holds my hand.

Things I Love Monday

Oh say what? It's March already. One more month til my 30th. Hot damn. 20s no more. Yet my body aches like a 70 year old #truestory #cuesadtrombones

Well it's Monday. Like seriously the year has flown sooo fast. WTF it's March already. I'm still not over it. I still have to scratch of the 2 to a 3 when I'm charting at work because my mind is still on February.

Anyways, this past 2 weeks has been busy and fun. 2 Saturdays ago, we celebrated my Sister's Husband's 30th birthday (known fact: he's my ex-boyfriend in our teens. TeeHee) at my favorite lounge in Los Angeles, The Edison. It was his first time (and my nth time) there and I'm glad he had a great time. Lounging around, watching some burlesques shows, eating some good bar foods, drinking good liquor (ABSINTHE!) and catching up (the last time I saw them was awhile ago)... Good times.

We were being goofy. Not drunk. Trust me. 

Then one of our party people was craving donuts (he has a donut fetish) so we yelp the closest 24 hour donut place and headed to California Donuts in Koreatown. Very random. 

Then the following Sunday, I headed to Laguna Beach for his beach birthday party with his family and friends... and I was super excited to see my little Kuma Bear.

Plus, this was my first beach encounter in over a year. Ever since Rob moved a little south and inland from the beach, and of course, traveling the world, I haven't been to Orange County in a looooonngg time. Driving down the 5 fwy made me really happy. 

In the baking world, we made bread for the last class. I was crying tears of joy inside. Me and Bread are like secret lovers. I can not every be 100% gluten free. NEVER. I love bread too much. 
What's better than warm slices of bread smothered in butter? BUTTER! Gimme my cup of tea and I will be a happy girl!

I was so in love with the Challah I made at class, I made a loaf today!
I didn't have sesame seeds so I used Pearl Sugars that I got from Switzerland. They look like sea salts, huh?

Also being the dedicated baker I am, I had to make madeleines this week. Not one type, but 2. I'm that crazy. I love baking too much.

Oh one more good news. Lo and behold... Southern California developed some snow over the weekend. And I can hear people in the East Coast laughing out loud at us for saying that this is snow.
